Chocolate Swirl Pistachio Ice Cream

Hi bakers. Today I’m showing you how to make homemade chocolate swirl pistachio ice cream. We’re using a popular no-churn method, so you don’t need an ice cream maker. Decadent chocolate ganache is swirled with rich pistachio ice cream, and it’s ready to eat after about 8 hours in the freezer. This is a favorite summertime dessert, and it’s surprisingly easy to make.

Start by making the chocolate ganache for the swirl. Place the chocolate chips in a heatproof bowl. Pour warm cream over the chocolate and let it sit for 2–3 minutes to soften. Stir slowly with a spoon or spatula until the chocolate is completely melted and combined with the cream. Set the ganache aside while you prepare the pistachio ice cream.

Grind the pistachios in a food processor until finely ground. Using a mixer, whip the heavy cream on medium-high speed until stiff peaks form. Add the ground pistachios, sweetened condensed milk, vanilla extract, almond extract, and optional green gel food coloring. Beat on low speed until just combined.

Spread about half of the ice cream mixture into a deep freezer-safe container, such as a 9×5-inch loaf pan. Spoon about half of the chocolate ganache over the mixture. Add the remaining pistachio ice cream mixture on top, followed by the remaining ganache. Use a knife to swirl everything together.

Top with chopped chocolate chips and extra pistachios, if desired. Freeze for at least 8 hours. Once frozen, the chocolate pistachio ice cream will be ready to scoop, serve, and enjoy.
